Currypuff |
Currypuff or Karipap in Malay, are delicious treats in Malaysia.It is crunchy from the outside and usually is filled with potatoes and sometimes beef. A great treat for any kind of snack. Here is a fried currypuff recipe I would like to show you. (read the following recipe below).
Ingredients for filling are:
2 large boiled diced potatoes.
1 medium red onion finely chop.
1/2 finely diced chicken or beef.
Curry mix-mix together with 1/2 a cup of water for paste.
2 tablespoon of beef or chicken curry powder
1/2 teaspoon chili powder (optional if you want it spicy)
1/2 turmeric powder
Seasoning:
1 teaspoon sugar
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 cup of water
2 hard boiled eggs (quartered)
oil for deep fry
How to make the currypuff dough:
Pastry dough A (outer)- knead into a dough
250gm all purpose flour
60gm shortening
20gm sugar
4gm salt
140gm water
Pastry dough B (inner)-knead into a dough
100gm high Ratio Flour (cake flour)
65gm or shortening (or Vege/Olive oil
Method:
1. First, make the filling. Heat up some oil in the pan and fry the onion till fragrant. Add the curry mixture you made earlier and stir fry till fragrant, make sure the fire is low to prevent burning it. Add chicken, potato sugar, salt and a dash of pepper. Add water and cook for 5 minutes till it is cooked. Leave aside to cool for awhile.
2. Second, divide the dough into 2 equal sizes.With a rolling pin, roll dough A into a flat and round shaped with a thick part in the middle.Take dough B and put it in the middle of dough A.Wrap up the both sides and make sure to close up dough B completely. with the rolling pin, roll the dough into a rectangle shape.From the top, roll it to a swiss-like roll shape.This is to add the swirls on the skin of the curry puff.
3. Third, with a bread knife, cut up the dough into 10 -15 pieces.Roll out each piece and fill it with the chicken curry filling.Fold into two and pleat the joints edge.Repeat the same for the second dough.
4. Last but not least, deep fry 180'c till it is light golden brown. Leave it to cool and you know, eat it!
