Chaudrée De Moules Au Fenouil Et Safran

Hello everybody, and today's delight is Chaudrée De Moules Au Fenouil Et Safran! Enjoy the recipe and for another Spanish delight.

Ingredients

  •  25 g/1 oz butter
  • 325 g/12 oz fennel bulb, sliced
  • 1 onion, chopped
  • salt and white pepper
  • 800 g/1 3/4 lb potatoes, peeled and cut into 2.5 cm/1 inch cubes
  • large pinch of saffron threads
  • 250 ml/8 fl oz fish stock
  • 1 bay leaf
  • 800 g/1 3/4 mussels
  • 500 g/1 lb 2 oz cod fillets, skinned and cut into 2.5 cm/1 inch pieces
  • 500 ml/16 fl oz milk
  • 250 ml/8 fl oz double cream
  • 2 tablespoons chopped fresh parsley

Frisée Aux Lardons



Hello chef juniors, and we got another delight of the day which is Frisée Aux Lardons. Enjoy the recipe!

Ingredients:

  • A large curly endive or escarole, about 450g/1 lb
  • 1 tablespoon vegetable oil
  • 175g/6 oz thickly sliced lean smoked bacon, dice
  • 2 garlic cloves, thinly sliced
  • 5 tablespoons red wine vinegar
  • Freshly ground black pepper

Hello junior chefs, and today we got another delight for you for this whole two weeks, but the twist is that all of the titles are in Spanish. This recipe is called Potage De Potiron Et. Enjoy!

 

Ingredients

 

  • 1 kg/2/1/4 lb pumpkin
  • 1 potato, quartered
  • 4 leeks, about 500 6/1 lb 2 oz
  • 1.2 litres/2 pints water
  • large pinch of ground nutmeg, salt and pepper
  • 125 ml/4 fl oz crème fraîche or double cream
  • pinch of sugar (optional)
  • 25 g/1 oz butter, cut into pieces
  • 1-2 tablespoons chopped fresh chives

Hello everyone and welcome back to the cooking class back here in Malaysia Treats! Today we have some traditional Indian food which involves potatoes and some other stuff. What is it called, you asked? Well the answer of your question is Potato Masala. Please do not get mixed of Masala as masak lah! It's pronounced Masala! So I hope that you enjoy the recipe of Potato Masala!


Ingredients:

  • 10 potatoes (boiled without skin and mashed)
  • 1 tablespoon vinga mungo (white kacang Dal)
  • 4 garlic
  • 2 tomatoes
  • 1 teaspoon mustard
  • cumin
  • 2 pieces curry leaves
  • 2 red chili (sliced)
  • 3 tablespoons cooking oil
  • 500ml water

There are two types of Idli, one of it is soft Idli and one of it is regular Idli. I hope you'll gather all these cooking steps to your mind and start making yourself some Idli! Ingredients:

  • 1/2kg boiled Indian rice (boiled for 3 hours and been drained)
  • 100kg normal rice (boiled for 3 hours and been drained)
  • 250gm vigna mungo (white Dal)
  • 750ml water (separate to equal fractions, 1 portion is 250ml

I can give you a hint of this food, it sounds a lot like "cepat" a Malay word for fast. And another hint is that "cepat" has "E" pronounced in the end. Masalodeh, I know it looks a lot like an extremely crunchy cookie fat cookie but it's actually Masalodeh the fattest cookie! So I hope you guys will gather all these yummy cookie steps!   • 500gm kacang dhal (soaked for 2 hours)
  • 3 big onions (sliced)
  • 2 green chillies (sliced)
  • 2cm ginger (sliced)
  • 2 pieces curry leaves (sliced)
  • 1 tablespoon cumin
  • Fennel seeds
  • 30ml water
  • Salt to taste
  • Oil for frying
